Summer Black Bean and Corn Salad

The #FirstDayofSummer is here and the heat tends to encourage us to eat light and healthy. We love to eat fresh in the #summer and find this black bean and sweet corn salad perfect this time of year.

This dish is great for everyone! Don’t be afraid to make this dish for kids as well. We have “no kids around,” but our five year old niece loves this salad and it’s great for your #vegetarian friends too!


For the sake of time tonight I used one can of black beans drained and rinsed and one can of sweet corn drained. Stir those together and add fresh minced garlic, diced red onion, finely diced jalapeño and chopped cilantro. Toss with olive oil and fresh lime juice. Dash of salt and pepper.

Store in fridge for up to one week. The flavor gets better as it continues to marinate. Serve immediately as a side salad or main course with a side of avocado.

This dish is versatile because you can add this salad to greens to make a satisfying main course salad. Add grilled chicken or shrimp and your favorite salad toppings. Delicious, light and easy!
